1½ cup brown sugar
½ cup vegetable oil
1 egg
1 cup sour milk or buttermilk
1 tsp. baking soda
2 c. flour
1 ½ c. rhubarb (cut into ¼ in. pieces)
½ c. of aronia berries, slightly mashed
1 tsp. vanilla
1 tsp. cinnamon
½ c. brown sugar
Preheat the oven to 350˚. Mix all ingredients together except for the cinnamon and the ½ cup of brown sugar. Pour mixture into a buttered 9×13 in. pan. Mix the cinnamon and remaining brown sugar in a small bowl. Pour onto the batter. Bake for 35-40 min. Serve with ice cream or whipped cream.
